Linzer Cookies
Everyone loves Linecke kolacky [Linzer cookies] !!
Czech Christmas Cookies, Linecke kolacky (Linzer cookies)

Ingredients: Yields 40 cookies
200g all purpose flour 100g butter 70g icing Sugar(confectioners’) 10g vanilla sugar 1 egg york Currant Jam (Your favourite jam!)

Directions: 1
In a bowl, cream the room temperature butter with a mixer.

Add Icing sugar and vanilla sugar and blend until fluffy.

Add egg yolk and mix well.

Add flour and blend with spatula until all flour is mixed in.
Wrap dough in plastic wrap or place into a plastic bag and refrigerate for 1 hour.

Preheat oven to 160°C (320°F).
Roll out dough to 5mm (1/4 inch) thickness on a lightly floured surface.
Cut into shapes and place on baking sheet.

Bake on the bottom rack for 10-15minutes until bottom is very lightly golden browned.
Remove the cookies from oven and cool on a wire rack.

DO NOT OVERBAKE!
Keep white surface.

Golden brown bottom.

After cookies have cooled completely, spread jam on centre of the bottom cookies.
Do not spread to the edge!

Enjoy!
Place cut-out cookies on top then you are done.

Arrangement
Coat top cut-out cookies with icing sugar.
Notes:
REMEMBER! Linzer cookies are sandwich.
Make 40 bottom cookies and 40 top cut-out (window) cookies.
You can substitute vanilla extract for vanilla sugar. If so, use 1 teaspoon
vanilla extract and 80g icing sugar.
