Ingredients:Yields 24 buchty
700g all purpose flour 150g unsalted butter, room temperature 50g+ 1tbsp sugar 1 1/2cups milk 30g (15g) yeast (dried) 1 pinch salt 3 egg yolks, room temperature 2tbsp lemon juice 1tbsp lemon zest 10g vanilla sugar
1. 100g cottage cheese 2tbsp icing sugar (confectioners’) 2. 5tbsp poppy seeds 1tbsp milk 1 1/25tbsp icing sugar (confectioners’) 3. 100g jam icing sugar (confectioners’) for dusting 1 egg for coating
In a small bowl mix 1 tablespoon sugar into luke warm milk and add the yeast.
Leave for 10 minutes and let the yeast rise.
In a large bowl place flour, sugar, vanilla sugar and salt and mix well.
Beat egg yolks in the small bowl with yeast and pour into the flour.
Then mix until all flour is combined.
Add diced room temperature butter and blend.
Add lemon juice and lemon zest and knead until smooth.
Place it into ceramic or glass bowl and cover with a clean cloth.
Let the dough sit in a warm space(oven or microwave…) for a hour until double in size.
Prepare fillings while the dough is rising. Mix cottage cheese and sugar and poppy seeds, sugar and milk.
Punch the dough and remove the excess air.
Divide the dough into 24 equal parts.
Roll the dough and place the filling and seal the edge.
Set the dough on baking tray and cover with a clean cloth for 15 minutes.
Brush surface of buchty with beaten egg.
Bake on the bottom rack in the preheated oven
at 150°C for 30 minutes.
Remove the buchty from oven and cool on a wire rack.
Dust icing sugar on the surface.
This recipe yields 24 buchty in a 22x32cm tray.
If the dough is too soft, add flour a little more.
