Czech marinated cheese.
Ingredients: Serves 2+
2 (200g) hermelin or camembert 3 cloves garlic 1 onion 2 dried bay leaves 1 chilli(red or green) 1tsp fresh or dried tyme 1/4 tsp salt 10 black peppercorns 1tsp paprika powder 10 juniper berries oil (sunflower oil or olive oil) 1 sanitized jar
Cut the cheese into 6 or 8 pieces.
Cut the chilli in half, remove seeds and slice.
Slice the garlic. Cut the onion in half, peel it and
slice crosswise into strips.
In a bowl, place bay leaves, tyme, salt, black peppercorns, paprika powder and juniper berries and mix well.
Add onion, garlic and chilli and mix.
At the end add cheese and mix gently.
In the sanitized jar, place 2 and cover with oil.
Refrigerate for 5 days.
Serve with baguette or crusty bread.
